Living a healthy lifestyle is about balancing a steady fitness regimen with a healthy diet. While we often find ourselves missing a workout now and then, missing a meal is just unacceptable.
Luckily, this week’s meal is pungent and full of flavour. It’s exactly the combination of aromas that will remind you of the benefits of keeping up a healthy eating routine.
This week’s inspiration comes from South America. Like the temperature of this region and much like their women, this dish is hot and spicy. It will keep your taste buds guessing and your body craving water, which you most likely haven’t consumed enough of anyway. Come to think of it, the feeling reminds me of a Pitbull video?! Nonetheless, this meal is simple to make and is a protein fiends best friend, chicken.
Hot’n’spicy Chicken Ingredients
¼ cup fresh mint
6 garlic cloves
¼ cup of olive oil
1 Tbsp. pepper
1 Tbsp. ground cumin
1 Tbsp. Sugar
2 Tsp. smoked paprika
2 Tsp. oregano leaves
2 Tsp. lime zest
¼ cup of lime juice (2 limes)
1 Tsp. salt
2 Habanero peppers (seeds removed)
4 – 10 oz chicken breasts (bone-in/skinless)
Combine all wet and dry ingredients in a food processor. Then add to CHICKEN BREASTS and let sit overnight. Roast in over for 425F or on the BBQ until cooked. Serve with cool yogurt sauce.
Yogurt sauce
¼ cup Greek yogurt (regular/plain yogurt)
1 shallot (minced)
1 Tbsp. lime juice
1 Tbsp. Cilantro (chopped)
1 Jalapeno pepper (chopped/minced)
2 garlic cloves (chopped)
1 Tsp. yellow grain mustard
¼ Teaspoon of Salt
Combine all ingredients and serve with chicken. Happy eating.
